Egg yolk garlands


Egg yolk garlands

Eggs 15
Sugar 500 gm
Water 3 cups

Method
Separate the yolks & whites. Keep the whites for ‘pinhanathappam’/ Egg snow pudding. recipe which follows next.
Strain the yolks through a fine cloth into a clean dry bowl.
In a piping bag or a  thick, clean plastic packet, make a small hole in one corner of it.
Put the sugar in a wide heavy vessel.
Add a little of the egg white rubbing it well.
Place it on fire, when it boils, remove all the scum & strain the syrup.
Heat it again & make a syrup of one string consistency.
Fill the plastic packet or a piping bag, pour the egg yolk, then in the syrup, make circular motion to form chain like strings.
Pour it continuously until the all yolk is finished.
Reduce the heat & sprinkle a little cold water.
Remove strings without breaking them.
Spread in a plate, keep slightly raised to remove the excess syrup.
While making strings, in case the syrup thickens, add little water & bring to one string consistency again.
Arrange the yolk garland in a large plate & pour pinhanathappam ( egg snow pudding) in the centre.
