Here's How: Bring a large pot of salted water to a boil then add 6
packed cups of watercress. Blanch until wilted, about 1 minute. Drain
and plunge into a bowl of ice water to cool. Drain and squeeze out
excess water. Then place in a food processor with 1 cup extra virgin
olive oil, 1/2 cup toasted almonds, 4 chopped cloves garlic and zest of 2
lemons. Pulse until smooth and season with salt, pepper and lemon juice
to taste.
