Pumpkin Spice Latte

Ingredients for Pumpkin Spice Latte: 

Pumpkin puree - 2 tbsp. 

Pumpkin spice - 1/2 tsp. (plus more to garnish) 

Ground black pepper - a pinch 

Granulated sugar - 2 tbsp. 

Vanilla extract - 2 tbsp. 

Whole milk - 2 cups 

Espresso - 1-2 shots (or 1/3 -1/2 cup strong coffee) 

Heavy cream - 1/4 cup (whipped into firm peaks) 

Method of preparing the Pumpkin Spice Latte:

Heat the pumpkin, pumpkin pie spice, and a generous helping of black pepper in a small saucepan over medium heat, stirring constantly, until it’s hot and looks cooked - about 2 minutes. 

Add the sugar and stir until the mixture starts to look like a bubbly, thick syrup. 

Whisk the milk and vanilla gently and warm, making sure that it doesn’t boil over. 

Carefully process the mixture with a hand blender or in a traditional blender until frothy and blended. 

Make the espresso or coffee and divide between two mugs. 

Add the frothed milk and pumpkin mixture. 

Top with whipped cream and a sprinkle of pumpkin pie spice, cinnamon, or nutmeg.
