makhana 1 cup
flaked rice/ avil 1 cup
rice 1 cup
chana dal 1 cup
urad dal 1 cup
mix all wash well, soak in just enough water for 4 hours
add to the mixer jar and grind if need be adding little water to a fine thick paste
put in a bowl, beat well for 3 minutes, cover and keep to ferment overnight
beat well the fermented batter for 3-4 minutes
add salt to taste and sugar 1 tsp
hing little
oil 1 tsp mix well
pour half the batter in a greased dish/ tray and steam for 5 minutes
chutney
coriander leaves 1 cup
green chilies to taste
rock salt to taste
ginger 1” cut
jeera pdr 1 tsp
amchur pdr 1 tsp
salt
little water to grind
peanuts 2-3 tbsp
make thick chutney
add 1-2 tbsp batter to chutney, mix well, spread on the steamed dhokla
steam for 2 minutes covered
then spread the remaining batter, cover and steam for 10 minutes
once cool, cut into desired shape

mustard seeds 1 tsp
white sesame seeds 1 tbsp
slit green chilies 2-3
curry leaves, hing a pinch
spread on the dhokla
