I had made earlier bread pudding, bread vadai, bread kheer, bread upma, today for the first time saw a recipe using bread for uttapam. Today with ladies working, hard pressed for time, thought that this is an easy recipe to make quick uttapam even when suddenly guests come and you don't have dosa/ idli batter !
INGREDIENTS
bread slices 4 big crumbled
curd 1/2 cup
green chilies chopped to taste
ginger 1" chopped
maida/ all purpose flour 2 tbsp
water as needed
semolina/ suji 1/4 cup + as needed
salt to taste
oil for cooking
onion/ capsicum/ curry leaves chopped
METHOD
In a mixer jar add bread, green chilies, ginger, curd, maida, blend well
pour the batter in a big bowl, add suji mix well.
cut onion, curry leaves chopped fine, may add carrot/ bellpepper/ capsicum as you like, along with salt to taste, mix well.
Make uttapam, once the tawa is hot, after smearing oil all around. You may make small ones or big as you prefer.
You can have it with milagai podi ( gun powder made with chana & urad dal, roasted with dry red chilies, roasted til and powdered with salt to taste).
Or else make coconut chutney with grated coconut, green chilies to taste along with fried dal/ pottukadalai and salt/ Temper with mustard seeds and urad dal.
