Semolina Kachori

 INGREDIENTS

for covering

semolina/ suji  1 cup

water  1 1/2 - 2 cups 

salt

ajwain

ghee 2 tbsp

Heat water adding salt, ajwain, ghee, once it boils, add the roasted semolina, mix well, remove from gas, smash it well with spoon, once ready to handle knead to a soft dough, cover and rest till you make the stuffing.


Stuffing

boiled and mashed potatoes  2 big

green peas boiled  1/2 cup

salt to taste

turmeric pdr 1/4 tsp

green chilies finely chopped 2 or as per taste

garam masala pdr 1/2 tsp

mash peas with the rest of the ingredients well

 

METHOD

take a big lemon size ball of the dough, make a cup, put enough stuffing, cover from all sides carefully, then flatten with your palms.

make all kachoris like this, while you heat oil.

Once the oil is hot, lower the flame little, fry the kachoris till golden, drain well, serve hot with coriander/ mint chutney.
