Suji Laddus

 *Ingredients:*

 
- 1 cup semolina (suji)
- 1/2 cup ghee (clarified butter)
- 1/2 cup sugar (adjust to taste)
- 1/4 cup milk
- 1/4 cup chopped nuts (cashews, almonds, pistachios)
- 1/4 cup grated coconut (optional)
- 1/2 teaspoon cardamom powder
- A pinch of saffron strands (optional)

*Instructions:*

1.  Heat ghee in a pan over medium heat. Add semolina and roast it, stirring continuously, until it turns golden brown and emits a nutty aroma.
 

2. Add chopped nuts and continue to roast for another 2-3 minutes.

3.  Gradually add milk to the pan, stirring constantly to avoid lumps. Once the mixture thickens, add sugar and mix well.

4.  Stir in cardamom powder and saffron strands (if using). Mix thoroughly and cook for another 5 minutes until the mixture starts to leave the sides of the pan.

5.  Remove from heat and let the mixture cool slightly. Once it’s cool enough to handle, shape it into small laddus (balls) with your hands.

6.  Allow the laddus to cool completely before serving. Store in an airtight container.
