Ingredients:
- 1 cup ricotta cheese
- 1/4 cup pistachios, chopped
- 1/2 cup unsalted butter, softened
- 1 1/2 cups all-purpose flour
- 1/4 cup honey (for drizzling)
- A pinch of salt
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a tart pan or individual tartlet molds.
2. In a mixing bowl, cream together the softened butter and a pinch of salt until light and fluffy.
3. Gradually add the flour to the butter mixture, mixing until a dough forms. Press the dough into the bottom and up the sides of the prepared tart pan(s).
4. Bake the crust in the preheated oven for 15-20 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
5. In a separate bowl, combine the ricotta cheese and chopped pistachios. Mix until well incorporated.
6. Fill the cooled tart crust with the ricotta mixture, smoothing the top with a spatula.
7. Drizzle honey over the filled tarts for added sweetness and flavor.
8. Return the tarts to the oven and bake for an additional 10-15 minutes, or until the ricotta is set and slightly golden.
9. Once baked, allow the tarts to cool before serving.
