Ingredients:
• 2 lbs. (900 g) of chicken bones (you can use bones left after eating roasted chicken, or from the butcher)
• 1 cup of apple vinegar.
• 2 carrots, diced
• 1 onion, diced
• 2 stalks of celery, diced
• 1 parsley root, cut into quarters
• Herbs to taste
• Salt and pepper to taste
• Enough filtered water to cover all the ingredients in the pot
Preparation:
1. Heat the oven to 350 f (180 c), coat a baking sheet and place the
bones on top. Put the pan in the oven and roast the bones until they are
slightly browned.
2. Put the browned bones into a large pot and cover them with water 1 -2
in (3-5 cm) above the bones.
3. Add apple cider vinegar to the pot, mix and place the pot aside for
30 minutes (without heating).
4. Add carrots, onions, celery, parsley root, herbs and salt and pepper
to the pot and place it over a high flame.
5. Once the water reaches a boil, lower the heat to low and cover the
pot.
6. Cook the stock for 4 hours, and remove foam and anything that
accumulates at the top. Add water occasionally if you see that the water
line is getting to low.
7. Continue to cook the stock on a low flame for 8-24 hours. After
cooking is finished, strain the liquid, and transfer to jars. Store in
the fridge.
