Sev Barfi is a delicious Indian sweet made primarily from sev (thin strands of chickpea flour vermicelli), sugar, milk, and nuts.
Ingredients:
Sev (plain or unsalted) - 1 cup
Condensed milk - 1/2 cup
Milk powder - 2 tbsp
Ghee (clarified butter) - 2 tbsp
Cardamom powder - 1/2 tsp
Chopped nuts (almonds, pistachios, cashews) - 2 tbsp
Saffron strands (optional) - a few, soaked in 1 tbsp warm milk
Instructions:
Heat 1 tbsp ghee in a pan. Add the sev and roast on low-medium heat for 3-4 minutes until aromatic and slightly crisp. Remove and keep aside.
In the same pan, add the remaining ghee and condensed milk. Mix well and heat on low flame.
Stir in the milk powder for thickness, ensuring there are no lumps.
Add the roasted sev to the milk mixture and mix until the sev absorbs the liquid.
Sprinkle in cardamom powder, saffron milk (if using), and half the chopped nuts.
Transfer the mixture onto a greased plate or tray. Flatten and spread it evenly using a spatula.
Sprinkle the remaining nuts on top and press gently.
Let it cool for an hour or refrigerate for 30 minutes until firm. Cut into square or diamond shapes.
Your Sev Barfi is ready! Store it in an airtight container for up to a week.
