Ingredients:
- 1 cup ricotta cheese
- 1/2 cup shelled pistachios, chopped
- 1/4 cup honey (plus extra for drizzling)
- 2 cups all-purpose flour
- 2 large eggs
- 1/2 cup unsalted butter, softened
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
For the Topping:
- Additional chopped pistachios
Instructions:
1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
2. In a large mixing bowl, cream together the softened butter and honey until smooth and well combined.
3. Beat in the ricotta cheese, eggs, and vanilla extract until the mixture is creamy
4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chopped pistachios.
6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
7. Bake for 30-35 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
8. Once baked, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
9. Drizzle the top with additional honey and sprinkle with more chopped pistachios for garnish.
