Method :
Mash the potatoes very well so no lumps
remain. Now add them to a cooking pot, along with cream and butter. Add
some salt and cheese and cook everything on a low flame to get a very
smooth and buttery potato mash.
If you have leftover mashed potato the above-mentioned step is to be skipped.
Transfer the mashed potato into a mixing
bowl, add the egg yolks and using a spatula mix everything well.
Transfer the prepared mixture into a
piping bag, at the same time, line a baking tray with parchment.
Gently pipe out small quantities of the potato mixture on the parchment.
Now bake these potatoes in a pre-heated
oven for about 15 minutes, or until they get golden crispy.
