Condensed milk cheesecake and its berry purée

 Ingredients

Cheesecake :

  • 2 cups cream cheese
  • 1 1/3 cup condensed milk
  • 3 eggs - use sub.- bananas
  • 2 Tbsp corn starch
  • 1 lemon peel

Berry purée :

  • 1 lb berrries
  • 1/4 cup sugar
  • 1/2 lemon juice
  • 2 tsp cornstarch

 

Preparation

In a bowl, put the cream cheese, the eggs, the lemon peel and the corn starch.

Add the condensed milk.

Blend the mix to get a smooth texture.

Pour into the greased mold. Bake for 30 minutes at 350°F (180°C). Leave to cool down long enough before unmolding. 

The berry purée : In a pot, put the berries , the sugar and the lemon juice.

Heat at medium heat, stirring regularly, until it is boiling. Leave for 8 minutes, then add the cornstarch and stir well. Take out of the heat and leave to cool down.

Serve the purée on top of the cheesecake and there you are!
