Ingredients
1/2 cup self raising flour
1/2 cup butter (softened)
1/2 cup icing sugar
1/2 cup desiccated coconut
3 Tbsp milk powder
2 Tbsp liquid milk
Instructions
1️⃣ In a large bowl, beat the butter and icing sugar until light.
2️⃣ Add coconut, flour, and powdered milk. Mix to combine the wet and dry ingredients. Add liquid milk and mix.
3️⃣ If the dough is a little sticky, sprinkle some flour. If it’s too dry, add a little liquid milk.
4️⃣ Using a spoon or an ice cream scoop, scoop the dough and roll into small balls.
5️⃣ Roll each dough ball in coconut. Place them in a prepared baking tray. Use a fork to make a pattern.
6️⃣ Bake in a preheated oven at 170 Degrees Celsius for 18 minutes or until slightly golden brown.
