We know Japan for its delicious dishes that we love so much ( gyozas, ramen or even bento) , but what about the pastries? Today we are going to discover mochi, small sweets often served at tea ceremonies and naturally gluten-free, made from glutinous rice flour, sugar and water. We chose to stuff them with peanut butter for maximum indulgence, but you are free to be creative with the topping! :-) Follow our step by step recipe below

 Ingredients

 Preparations

  • Peanut butter stuffed mochis - Preparation step 1Place a tablespoon of peanut butter in the center of a square of cling film.
  • Peanut butter stuffed mochis - Preparation step 2Fold the cling film towards the center to form a ball. Close and place the peanut butter balls in the freezer for about 15 minutes (time to prepare the mochi dough).

    In a pan, combine the water and sugar over medium heat until the sugar is completely dissolved in the water.
  • Peanut butter stuffed mochis - Preparation step 4Then add the glutinous rice flour and incorporate it well.

 

 

  • Peanut butter stuffed mochis - Preparation step 5Continue to stir (still over medium heat), until the dough thickens and comes away from the edges of the pan.
  • Peanut butter stuffed mochis - Preparation step 6When the dough forms a homogeneous ball, place it on a work surface with the cornstarch and let it cool for a few moments.

  • Peanut butter stuffed mochis - Preparation step 8Cut the rectangle into eight equal parts.

 

 

 

  • Peanut butter stuffed mochis - Preparation step 9Remove the peanut butter balls from the freezer and place them in the center of each piece of dough.
  • Peanut butter stuffed mochis - Preparation step 10Fold the dough towards the center of the mochi to seal it (you can dip your fingers in water to make it stick better) and form a ball.

Observations

What fillings should you use for mochi?
Traditionally, mochi is filled with a sweet red bean paste, some versions contain pieces of fruit, but you can be creative and garnish them with chocolate ganache, spread, or even ice cream to make frozen mochi!

How to store mochi?
Ideally, it is better to eat the mochi quickly for a better texture, but you can store them for around 3 days in an airtight container away from light. Storing in the refrigerator is not recommended as the mochis risk hardening.

Can you put mochi in the freezer?
You can put the mochis in the freezer if you decide to make a stuffed with ice cream version.
