Bajra Til Burfi

 INGREDIENTS
Almond (Almond 1⁄4 cup)
Cashew nut (काजू ¼ cup)
Sesame Seeds1+ ¼ cup (ितल 180gm)
Ghee ¼ cup +  1tsp (घी50gm)
Pearl Millet flour 1 cup (millet flour 200gm)
Jaggery 11/2 Cups (Gur/ jaggery 300 gm) Water 2 tsp
Cardamom pdr 1/2 tsp

Preparations
Dry roast almonds and cashews lightly, remove

add sesame seeds roast till it makes noise, remove 2 tbsp and the rest to the nuts

heat ghee, add pearl millet flour, keep frying till the ghee comes out from the flour, remove

powder the nuts first, then add the sesame seeds and powder both together, add the roasted flour to it.

heat 1 tsp ghee add gur cut into small pieces along with 2 tsp water, while it is melting, pdr cardamom

once gut bubbles well, add the pr nuts n seeds along with roasted flour and sesame seeds kept aside

keep cooking it on low flame along with cardamom pdr

once the mixture thickens, to test done, put a tsp of the mixture on a plate, once cool, if you can roll it into a ball, it means the mixture is done. keep stirring after you've switched off the gas for a few more minutes.

grease a tray or plate well, sprinkle some chopped nuts, spread the mixture on the prepared plate/ tray, sprinkle some roasted sesame seeds and chopped almonds on top, lightly press it down.

leave it to cool for 30 minutes.

Then you can easily cut it into desired shape. This lasts easily for a month.
