Ingredients:
1 cup raw almonds
1 cup all-purpose flour
1/2 cup granulated sugar
1 tsp baking powder
1 tbsp Dutch-processed unsweetened cocoa powder
1/2 tsp ground cinnamon
Zest of 1 organic orange
1/4 cup fresh hot coffee
1 tbsp milk (dairy or plant-based)
Powdered sugar for dusting
Directions:
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a food processor, pulse the almonds until they’re finely ground.
In a large mixing bowl, combine ground almonds, flour, sugar, baking powder, cocoa powder, and cinnamon. Add the orange zest and mix well.
Gradually add the hot coffee and milk, stirring until the mixture forms a dough.
Shape dough into small balls or oval shapes and place them on the prepared baking sheet.
Bake for 15-18 minutes, or until the cookies are firm to the touch and slightly golden.
Let the cookies cool, then dust with powdered sugar before serving.
