Method :
Add the soaked white peas to a pressure
cooker, add salt and asafoetida and cook for 3-4 whistles. Once cooked,
add turmeric, cumin powder and red chili powder and mix well.
To the mashed potatoes, add salt,
cornflour, rice flour and garam masala and mash well. Then prepare small
tikkis out of them.
Take a flat pan or a saucepan and add
some oil to it. Place the tikkis over it. Fry on both sides until the
tikkis are golden brown and crispy on both sides.
To assemble the chat, take a serving
plate, and place 2 tikkis on it. Pour the prepared white peas gravy all
over it.
Now add the green chutney followed by the tamarind chutney. Add some
sugar powder to the curd and mix that well.
Pour the sweetened curd over the chat.
Now top it with roasted cumin powder and red chili flakes.
Finally, add the crunch element,
sprinkle the fried potato bhujia and lightly crushed papdi over the
chat. Serve immediately and enjoy.
