Chocolate Tiramisu Cake

 Ingredients:

 2 cups of all-purpose flour

 1 cup of unsweetened cocoa powder

 1 and 3/4 cups of granulated sugar

 1 and 1/2 tsp  baking powder

 1 and 1/2 tsp baking soda

 1 tsp salt

 2 large eggs

 1 cup  buttermilk

 1/2 cup  vegetable oil

 2 tsp vanilla extract

 1 cup  hot coffee

 1/2 cup  coffee liqueur

 8 ounces  mascarpone cheese

 1/2 cup  heavy cream

 1/2 cup  powdered sugar

 2 tbsp cocoa pdr for dusting

 Chocolate shavings for garnish


 Directions:

preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, and vanilla extract. Gradually add this mixture to the dry ingredients, mixing until well combined.

Stir in the hot coffee until the batter is smooth. Divide the batter equally between the prepared pans.

Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

 In a small bowl, combine the coffee liqueur and mascarpone cheese. In another bowl, whip the heavy cream and powdered sugar until stiff peaks form.

Gently fold the whipped cream into the mascarpone mixture to create the tiramisu frosting.

Once the cakes are completely cooled, spread a layer of the tiramisu frosting on top of one of the cakes and place the other cake on top.

Use the remaining frosting to cover the entire cake. Dust with cocoa powder and garnish with chocolate shavings.
