Vegetable Stuffed Paratha

Ingredients

For The Dough

Sieve the flour along with the salt
Add melted butter, mix well and make a soft dough using enough water.
Knead well for 2 to 3 minutes and divide the dough into 4 equal portions. Keep aside covered with a lid.

For the Stuffing

Bring the vegetables together in a bowl and add salt and mix well and keep aside for 10 minutes.
Squeeze out the water from the vegetables and add mint & coriander leaves, green chilies, chaat masala, garam masala, salt to taste and mix well. Keep aside.

To make paratha

Roll out each portion of the dough into a circle of about 100 mm. (4") diameter with the help of some flour.
Place a portion of the stuffing in the centre of the circle and bring together all the sides in the centre and seal tightly.
Roll out each portion of the dough into a circle of about 100 mm. (5") diameter with the help of some flour.
Cook on a tava using a little butter until golden pink spots appear on both sides.
Repeat steps 1 to 4 with the remaining mixture to make 4 more parathas.

Serve hot immediately with a dollop of butter, fresh curds and tomato/ mint chutney.
