Ingredients
peanuts washed and soaked overnight 1 cup
radish medium 3 with leaves, chop the radish leaves fine
methi/ fenugreek leaves 1 small bunch, remove the leaves only
green chilies 3-4 finely chopped as per taste
turmeric pdr 1/2 tsp
amchur pdr 1/2 tsp
Kashmir red chili pdr 1/2 tsp
oil 2 tbsp
mustard seeds 1/2 tsp
jeera 1/2 tsp
hing little
ginger finely chopped 1 tsp
garlic finely chopped 1/2 tsp
coriander leaves finely chopped 2 tbsp
Method
In a big pan add the washed -soaked peanuts with enough water to cook it
once the peanuts have boiled for 15 minutes on medium flame
add chopped radish, cut into small 1" pieces roughly
add little salt, let the radish also get cooked not till mashed, strain it well and keep aside
in a big pan, add oil, add mustard seeds and jeera, once they crackle, add hing, ginger, garlic fry well for 2 minutes, then add chopped green chilies, fry for a minute
add methi leaves and finely chopped radish leaves, keep stirring it well, till the leaves come together
add turmeric pdr, amchur pdr, red chili pdr, mix well, saute for a minute
add the strained peanuts and radish, mix well adding salt to taste
keep stirring often for about 10-12 minutes, till the colour of the leaves and radish changes as all the masalas should be well absorbed by the radish and peanuts, cook on low flame adding half of the coriander leaves
remove , garnish with rest of the coriander leaves, serve hot with roti, dal and rice or can have it plain as salad.
