Green Pea and Mint Soup

Ingredients:

  • 2 cups green peas (fresh or frozen)
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • 4 cups vegetable broth
  • One fourth cup fresh mint leaves
  • Salt and pepper to taste

Steps:

1. Heat olive oil in a pot, add garlic and onion, and sauté until soft.
2. Add green peas and cook for a few minutes.
3. Add vegetable broth, bring to a boil, then reduce heat and simmer for 10 minutes.
4. Add mint leaves and blend until smooth.
5. Season with salt and pepper before serving.
