Tomato Basil Soup with Cayenne

 Ingredients

 4 large tomatoes, chopped

1 cup fresh basil leaves

1 onion, chopped

2 cloves garlic, minced

1 tsp olive oil

1/2 tsp cayenne pepper

4 cups vegetable broth

 Salt and pepper to taste

 

Steps:

1. Heat olive oil, add garlic and onion, and sauté until soft.
2. Add tomatoes and cayenne pepper, and cook for 5 minutes.
3. Add vegetable broth, bring to a boil, then simmer for 20 minutes.
4. Blend with basil leaves until smooth, then serve.
