Suji-Nuts barfi

 Ingredients

suji/ semolina about 200 gm

fox nuts/ makhana 1 cup

cashew nuts  1/4 cup

dried figs  15 soaked in hot water

milk 500 ml

ghee 5-6 tbsp

sugar  250-300 gm or as per taste

raisins 1 tbsp

 

Method

grind soaked figs, cashew, roasted fox nuts together adding milk to a paste

heat 1 tbsp ghee, roast suji well for 3-4 minutes on low flame, adding raisins in the last 2 minutes roughly

then add the ground paste, mixing well, with milk, see that there are no lumps.

You may switch off the gas and the paste, milk and mix well, then on the gas, and cook the paste well, till the milk is absorbed, now add sugar, keep stirring well, or else, it can get stuck and get burnt.

once the sugar is well absorbed, add 1 tbsp ghee, keep stirring till the ghee is absorbed, repeat the process adding a tbsp ghee and stirring well.

when you see the whole mixture comes together as a mass, leaving the sides of the pan (I don't  use non-stick pan ), add another tbsp of ghee mix well, once the ghee is completely absorbed, pour the mixture on a greased plate, level, adding nuts on top and pressing it down well., let it set then cut into desired shape and serve.
