Ingredients
Rice Flour - 1 Cup
Maida - 1/2 Cup
Rava / Suji - 1/2 Cup
Salt to taste
Chili Powder - 1 Tsp
Onion - 1 finely chopped
Green Chili - 2 finely chopped
Ginger finely chopped 1 tsp
Curry Leaves finely chopped 2 sprigs
Coriander Leaves finely chopped 1 tbsp
Hot Oil - 1 Tbsp
Water as needed to make batter
Method:
1. Take rice flour, maida, suji rava in a large bowl.
2. Add salt, chili powder, onions, green chilies, ginger, curry leaves and coriander leaves.
3. Mix it all well and pour in the hot oil. Mix it again.
4. Now gradually add water and prepare the dough.
5. Apply some oil on the prepared dough and then let it sit aside for about 15 mins.
6. In the meanwhile, heat a kadai with some oil.
7. After 15 mins resting, take small portion of the dough and place it on a banana leaf.
8. Gently press it down to make a circle.
9. Dab a little water on the top to make not let it dry.
10. Once the oil is nicely heated up, gently drop in the prepared vadas.
11. Fry them until they are golden brown in colour on all sides.
12. Crispy and tasty Maddur Vadas are ready to be served hot with coconut chutney or mint chutney with your hot tea or coffee.
