Gur ki roti

Gur, / jaggery is one of the key ingredients in preparing sweets in Bihar. Festive menus are no strangers to this ingredient and why should they be as it is healthier compared to sugar. Gur ki roti is one such delectable dessert the traditions of the state prefer. Never feel far from home during the festive season.

Take a small pan and place it on a low flame. Add in jaggery with water.
Mix till it dissolves completely. Set aside to cool. Strain it once it cools.
Grind or crush cardamom seeds to a coarse powder.
Take a wide bowl or a plate with edges. Toss in the wheat flour, fennel seeds, sesame seeds, jaggery syrup, and cardamom powder.
Slowly start mixing and kneading to form a soft stiff dough. Use water if needed to get the right consistency.
Cover with a wet cotton cloth or plate and set it aside for 15 minutes.
Gently knead the dough again and divide into equal portions.
Similar to making other Indian breads, use a rolling pin and stand/mat to make the roti. Dust some flour as needed.

Heat a flat frying pan (tava) on medium flame and grease it with a little ghee or oil.
Add the rolled roti once the pan is hot and roast it on both sides (You can cover them with a lid to get a soft finish or let them roast without lit for a few seconds before covering them to give a crispy outer layer).
Repeat till golden brown spots appear and spread on both sides.
Ready to serve with pickle or chutney.
