Preparations
Take pumpkin, peel and de-seed it. Cut it into cubes.
Take the onion, peel and cut it into small pieces.
Take half a cup of quinoa,
add one cup of water and boil it on medium flame for 20 minutes.
Boil the pumpkin and onion with adequate
water for 20 to 30 minutes (the pumpkin should get cooked).
Once it cools down a bit, mix the boiled
pumpkin and onion in a blender with salt and pepper. Add water if
necessary.
Take it from the blender and heat it again.
Pour the soup in the bowl and top it with the required quantity of quinoa. Mix well.
Top it with feta cheese and coriander leaves.
