3 large baked potatoes
Butter
3 eggs
3 strips bacon, cooked and crumbled / Use veg sub.
3 tbsp shredded Cheddar cheese
1 tbsp fresh parsley, chopped
Salt and pepper, to taste
Directions:
1. Lay the baked potato on its side and slice off 1/3 of it, cutting
lengthwise. Then, using a spoon remove the center of the potato forming a
bowl.
2. Place ½ tablespoon butter in the center of each potato then gently
break an egg into the center – try not to break the yolk.
3. Top each with bacon, cheese and parsley, then season with salt and
pepper.
4. Bake at 425°F for 10 to 15 minutes. Serve and enjoy while hot!
