This recipe has neither onion not garlic. So, fit to made during those festival days.
INGREDIENTS
mustard oil 1 tbsp
jeera 1/2 tsp
mustard seeds 1/2 tsp
ginger finely chopped 1 tsp
hing little
fresh paneer 200 gm
capsicum chopped 1
spinach 1 bunch blanched and pureed
cherry tomatoes 15-20
fresh cream 2 tbsp
garam masala 1 tsp
amchur pdr 1/2 tsp
turmeric pdr 1/2 tsp
dry red chilies 2 broken
red chili pdr to taste
water as needed
METHOD
in a big pan, heat mustard oil till it smokes, then add jeera and mustard seeds. Once they crackle
add hing, dry red chilies and ginger , fry till ginger turns brown
add capsicum, fry a little
add paneer, break it well, add turmeric pdr and red chili pdr mix well, let it cook for 3-4 minutes
add palak puree, mix well, add some water in the mixer jar to get the maximum remaining paste of palak
mix it well, cover and let it simmer for 4-5 minutes
add cherry tomatoes, salt to taste, mix well, cover and let it simmer for another 4-5 minutes
now add garam masala, amchur pdr mix well adding fresh cream
let it come to a boil, remove, garnish with fresh coriander leaves and serve hot with roti/ rice.
