Spinach Sambhar


Spinach Sambhar

1 small cup of finely chopped spinach leaves ( as I need to make for just 2 of us)
There is no hard & fast rule how much you want to add.
Tamarind juice 1 cup
Cooked arhar/ tuvar dal 1 cup or more as needed
Salt & sambhar powder to taste
Hing/asafetida a big pinch
Fresh coriander leaves 2-3 tbsp finely chopped
Mustard seeds 1 tsp
Methi seeds ¼ tsp
Curry leaves a sprig
Oil 1 tsp
Method
1)      In a micro safe dish, I added oil & mustard seeds, kept for 90 seconds.
2)      Once it crackled, added methi, curry leaves & hing & kept for 30 seconds.
3)      Then I added finely chopped spinach, sautéed for a minute.
4)      Then added tamarind juice & ½ cup water, sambhar pdr., salt & micro high for 3 minutes.
5)      Mixed the cooked dal with 2 tsp of atta well, added to the boiled mixture, add water if it is too thick, mix well, micro high for 2 minutes, adding coriander leaves.

This goes well with hot rice. This sambhar is healthy, as it has spinach. It was quite tasty.
This can be done in the normal way on the gas, following the same procedure
