Peanut & rice salad


Ingredients
Any left over rice 1 big cup         roasted peanuts 50gm             sesame seeds lightly roasted 1 tbsp
Fresh coriander 1 cup              green chilies 3-4 finely chopped

Dressing
Ginger grated ½”              minded garlic 2 cloves     sesame oil1 5 ml     
soy sauce 1 tbsp              grated jaggery ½ tbsp

Method
1)      Coarsely grind ½ the peanuts. In a mixing bowl, prepare the dressing by mixing all the ingredients & whisk till the jaggery has melted.
2)      To assemble, mix rice, sesame seeds, chilies, coriander & ground peanuts.
3)      Add the dressing & mix well.
4)      Garnish with whole peanuts.
