Mixed salad with brinjal ( aubergine) & feta


Ingredients
Round large brinjal, cubed & fried 100 gm      dried oregano 1 tbsp        fresh mint leaves a handful
Cherry tomatoes halved 500 gm       feta cheese crumbled/ paneer 30 gm       lemon squeezed ½
Olive oil 2 tbsp      hazelnuts/peanuts 2 tbsp  
handful of rocket leaves or any salad leaves washed & torn 1 cup

Method
1)      wash & dry the salad leaves.
2)      Arrange & top them with cherry tomatoes & brinjal.
3)      Sprinkle some crumbled cheese.
4)      For the dressing, mix oil, lemon juice, mint leaves & oregano.
5)      Season with salt & pepper pdr. To taste.
6)      Pour a bit of dressing on the salad, garnish with roasted nuts 7 serve.
7)      Instead of frying, you can grill the brinjal in preheated oven at 180 deg. C for about 20-25 minutes.
