DIABETIC FRIENDLY APPLE-OATS PUDDING

INGREDIENTS
 apple 2 peel and grate in  little water or else it turns brown
oats roasted and powdered 2 tbsp
milk  2 cups
milk pdr.  2 tbsp
cardamom pdr. 1/2 tsp
cashew nuts 1 tbsp chopped and or other nuts of your choice
raisins 1 tbsp  or you may add chopped dates when you cook apple
ghee 1 tsp to roast nuts and raisins

METHOD
in one pan, add roughly 1/2 cup milk, add the apple grated along the water, stir and cook on low flame covered stirring from time to time, till all the liquid evaporates and apple is also cooked, remove, slowly add the milk pdr, while stirring well
in another heavy pan or non-stick pan, boil rest of the milk, on low flame till it gets reduced to roughly half, add the powdered oats, then add the cooked apple to which milk powder is added, keep stirring till it gets thick, add cardamom powder and half of the roasted nuts and raisins, keeping rest for garnishing. It can be served hot or cold.
This can be safely given to diabetes and those who are calorie conscious, as it contains no sugar, some carbs, protein, fibre from fruits, raisin and oats. It is very mildly sweet with natural sweetness from fruits and milk. So, those who have too sweet tooth may need to add sugar, but I'm sure that once you try this, you'll give up your craving for more sugar.
