SAMAI VEGETABLE RICE


 rice and veges mixed, ready for dinner

INGREDIENTS
samai rice 1/2 cup ( this rice is high in fibre, low GI, looks like bigger semolina)
sweet corn 1 tbsp
onion 1 chopped
tomatoes 2 chopped
capsicum 1 chopped
soya chunks a handful, soaked in hot water for 15 minutes, drained, squeezed out the water and cut into small pieces)
jeera / cumin 1/2 tsp
oil 2 tsp
ghee 1 tsp
garam masala pdr. 1/2 tsp ( optional)
garlic 2 small chopped ( optional)
green chilies 3 chopped or slit
curry leaves few chopped
coriander leaves 1 tbsp chopped
salt to taste
turmeric pdr.  1/4 tsp
hing / asafoetida 1/8 tsp
ghee 1-2 tsp

METHOD
heat oil in a pan  / kadai, fry cumin till it gives  out a nice aroma, add little hing, add chopped onion, garlic, green chilies, curry leaves, fry for 3 minutes or till transparent, then add chopped tomatoes with wee bit of salt, cook for another 3-4 minutes, add soya chopped along with capsicum, sweet corn, turmeric pdr, garam masala pdr.,add 1 tsp ghee, mix well, cover and cook till veges are cooked, add coriander leaves. soak samai rice  cook with double the amount of water, either in a pressure cooker or pan covered, mix with veges adding salt to taste. serve hot with raita of your choice and roasted papad.

ps- this will make a complete meal on its own, as it has carbs, proteins, minerals and vitamins.
You may use soya granules too, instead of soya chunks and you may add whatever vegetables you've or like.
You may use any rice that you've, but I'm using samai, as it is healthier and also as I've it !
