Samai rice pongal

INGREDIENTS
samai rice 1 cup
yellow moong dal or even green moong dal 1/2 cup
salt and pepper pdr. to taste
cashew nuts 2 tbsp chopped
jeera / cumin 1 tsp
curry leaves few chopped
ghee 2 tbsp
ginger chopped 2 tsp

METHOD
wash dal and rice, pressure cook by adding 3 1/2 cups of water
heat ghee in a pan, add jeera, once it crackles, add cashew nuts, ginger, curry leaves, pour over cooked rice and dal to which salt and pepper pdr. are added, pour the nuts on top, mix well, serve hot with coconut chutney. I made this a fortnight back, forgot to take pictures, as gobbled it up on our return from check-up, as it was quite late. 
ps- you can add some veges like carrot, cauliflower, peas also when you cook rice to make it more nutritious. This rice when cooked tastes more like thick semolina or suji ! May be one of these days shall try making either kheer or sweet pongal with this rice ! shall let you all know.
