Green Moong Idli with Peanut- coconut chutney

INGREDIENTS

green moong dal soaked  1 cup
green chilies 2-3 as per taste
ginger 1 tsp chopped
hing 1/4 tsp
carrot grated 2-3 tbsp
peas 2 tbsp
spinach chopped 2-3 tbsp
salt to taste
coriander leaves finely chopped 1 tbsp 
water as needed
2 tbsp curd
for seasoning
oil 2 tsp
mustard seeds 1 tsp
urad dal 2 tsp
chana dal 2 tsp
hing little
curry leaves finely chopped 1 tsp
cashew nuts chopped 1 tbsp 

METHOD
grind moon dal along with ginger and chilies to a fine paste, add salt, hing, curd, mix well
keep aside for 2-3 hours to ferment ( in case you want to make for b'fast, then don't add curd, grind and keep over-night)
before steaming, add the veges, then heat oil, add mustard seeds, once it crackles, add the dals, once they turn light brown add curry leaves, hing and cashew nuts, pour over the batter, mix well, add water if needed to make it like idli batter.
make idlis in greased idli maker, steam in a hot pan, for 10 minutes, serve hot with chutney of your choice.

Health Tips
this is a very healthy, protein, fibre and mineral rich snack, which is easily digestible, even good for diabetics, as unlike normal idlis, this having more fibre, its glycemic index is low, so it won't spike your sugar levels.Peanuts are again good source of proteins, don't remove its skin, good source of fibre and minerals, coconut rich in Vitamin E along with healthy fat, green chilies and coriander leaves are rich in Vitamin C !

Peanut chutney
roasted and soaked peanuts 3 tbsp
fresh grated coconut 1/2 cup
green chilies 3-4 or as per taste
coriander leaves chopped 2 tbsp
salt to taste
lime juice 1 tsp
grind all this to a fine paste adding little water. 
seasoning- heat 1 tsp oil, add 1/2 tsp mustard seeds, once it crackles, add 2 tsp urad dal , little hing, pour over the chutney, mix well, serve with hot idlis.
