A SPICY SOUTH-INDIAN STYLE PASTA


INGREDIENTS
whatever pasta you want you can use, I used shell pasta today about 1 bowl, cooked as per instruction, drained and kept
For South Indian style
Oil 2 tbsp
mustard seeds 1/2 tsp
chana dal 2 tsp
urad dal 2 tsp
peanuts 2 tbsp ( if roasted one you've, then you can add it later or put it along with dals to fry)
green chilies 3 or as per taste ( as I used 3 small ones, but they're quite spicy !)
onion 1 finely chopped
potatoes 1 big finely chopped
capsicum finely chopped 2 tbsp
cheese spread 2 tbsp or you may use whatever cheese you've grated as much as you like
hing 1/4 tsp
curry leaves chopped 1 tsp
coriander leaves chopped 2 tbsp

METHOD
heat oil, add mustard seeds, once it crackles, then add the dals, fry till golden
then add onion, chilies, curry leaves and hing, fry till onion is transparent
add potatoes, wee bit of water, cover and cook till they're 3/4 done, then add capsicum, those like my husband like capsicum soft can add it along with potatoes, once the veges are cooked, add the roasted peanuts or else add peanuts along with dals and fry
add salt, cheese mix well, add the cooked pasta, check for salt, add chopped coriander leaves, if need be add more salt, as normally when we cook pasta, we cook with salt and wee bit of oil.
serve hot.

ps- you may add carrots, cabbage, cauliflower, peas or whatever veges you've and make. it makes a complete healthy meal, as the shell pasta was made with wheat flour, then it has veges, proteins, in the form of dals, peanuts and cheese, fat as oil, vitamins C from green chilies and coriander leaves and vitamin E from curry leaves. This style was what hubby wanted for a change, as I do with veges, and at times with healthy white sauce and cheese, or potatoes and spinach with white sauce and cheese, so this was a good change, as per hubby's taste.
