SPINACH- SPRING ONION SPICY PANCAKE / CHILA

INGREDIENTS
besan / gram flour  1/2 cup  or soy flour
rice flour 1/2 cup   or multi-millet flour
salt to taste
spinach finely chopped 1/2 cup
spring onion finely chopped 1/4 cup along with the green  or use plain onion
green chili finely chopped to taste or you may use green chili paste too
hing 1/8 tsp
coriander leaves chopped 1 tbsp
oil for cooking
paneer or cheese grated 1/2 cup

METHOD
mix the flours, salt, hing well, add green chili, spinach, spring onion and mix well
add enough water to get like for dosa or pancake consistency
heat a pan or tawa, smear little oil, spread pancake/ chila as thin as you can, cook on medium flame till brown on one side, put littel oil on top, then turn  OR, you may cook on low flame covered till the bottom turns golden, spread some paneer or cheese on top, cover for 2 minutes, then fold and serve hot with chutney or along with paneer / cheese, you can spread some dry chutney powder too. serve hot.
