Rava or Semolina- vege cutlets

INGREDIENTS
semolina/ suji/ rava   1 cup
water 2 1/4 cups
salt to taste
carrot finely chopped 3 tbsp
cauliflower florets 3 tbsp
fresh/ frozen green peas3 tbsp
cabbage finely chopped 3 tbsp
green chili-ginger paste 2 tsp
hing 1/4 tsp
roasted chana dal / pottukadalai  2-3 tbsp or better still crush oats to coat
besan 1 1/2 tbsp for batter
oil 2 tsp
oil for frying
fresh coriander leaves chopped 2 tbsp

METHOD
boil water along with all the veges, salt and the green chili-ginger paste, oil 2 tsp and hing, once the water boils for 2 minutes, lower the flame, add the suji, keep stirring, so no lumps are formed and cook it is thick and leaves the sides of the pan, best to use a heavy or non-stick pan for this.Remove, cool slightly, then shape either into round or heart or oval, coat in besan batter, adding seasoning to it, then coat in roasted chana dal powder or crushed oats powder, shallow fry in a pan, to make it healthier ( those who prefer can deep fry it) but those who are health conscious may shallow fry, using little oil, serve hot with chutney or ketchup.
Many don't like to eat suji upma, I'm sure they'll love the cutlets, though it is different form of upma !
