Chinese vegetable toast



INGREDIENTS

Bread slices 6-8

Potatoes boiled, peeled and mashed 1 cup

Spring onion chopped along with green 3

Carrot chopped and boiled ½ cup

Capsicum chopped 1

Soya sauce 1 tsp

Chili sauce 1 tsp

Salt to taste

Corn flour 2 tbsp ( 1 tbsp mixed with little water)

Oil for shallow frying + 2 tbsp oil

Sesame seeds 2 tbsp ( black and white mixed)


METHOD

Heat oil, add onion fry till transparent, add capsicum, add wee bit of salt, fry till colour changes.
add carrot, potatoes, the sauces, mix well, sprinkle corn flour 1 tbsp, mix well. Remove and cool.

Spread this mixture evenly on top of a slice of bread, if the slice is too big, you may cut into smaller squares or triangles
then dip in corn flour slurry, sprinkle sesame seeds on top, put the mixture side facing down in a hot pan with oil, let it brown in medium flame, turn apply oil, and let it brown well on both sides.
drain well on kitchen napkin 
serve hot with ketchup or any dip of your choice- thick curd, mixed with mayonnaise and chili sauce or cheese spread mixed with chili sauce and tomato ketchup.

You may prepare the filling, cut bread slice, batter ready, shallow fry just before ready to eat.
