Oatmeal cake

Ingredients
boiling water  1 1/4 cups
brown sugar  1 cup
oatmeal  1 cup
vanilla essence  1 tsp
all purpose flr./ maida  1 1/2 cup
eggs  2
sugar  1 cup
oil / butter 1/2 cup
baking soda  1 tsp
salt  1/2 tsp
cinnamon  3/4 tsp
nutmeg  1/4 tsp


Method
pour water over oats, keep it aside for 20 minutes.
beat butter until creamy, add sugar and beat until fluffy
add vanilla, eggs, oats, mix well
sift together flour, baking soda, salt, cinnamon and nutmeg
add the sifted ing. to the egg mixture, mix well
pour into greased and floured pan
bake in pre-heated oven at 350 deg. F for around 50 minutes or till the toothpick inserted in the centre of the cake comes out clean

Caramel Frosting
brown sugar  1 1/2 cups
butter  2 tbsp
milk/ cream  3/4 cup
vanilla  1/2 tsp
cook sugar and cream until soft ball consistency, add vanilla and butter, cool, beat well until desired consistency to spread.
serve warm for best taste
