Masala Rolls

Ingredients

for stuffing

oil  2 tbsp
mustard seeds  1 tsp
jeera/ cumin 1/2 tsp
urad dal  2 tbsp
curry leaves few finely chopped
chilli-ginger-garlic paste  2 tbsp
onion 2 finely chopped
salt
tomatoes  4 chopped fine
turmeric pdr.  1/2 tsp
chilli pdr.  1 tsp
sambar pdr.  1 tsp
potatoes  3 medium boiled and mashed
coriander leaves finely chopped  2 tbsp

heat oil in a pan, add mustard seeds and jeera. once they crackle, add urad dal, curry leaves fry for a minute, add onion, fry till light pink, add the chilli-ginger-garlic paste, fry for a minute
add tomatoes, turmeric and chilli pdr., salt little, fry till tomatoes are well cooked adding sambar pdr., then add mashed potatoes, salt to taste, coriander leaves, mash all well together, fry for 3 minutes, remove, cool

for dough
rice flour  50 gm
wheat flour/ atta  50 gm
chopped coriander leaves  2 tbsp
chilli-ginger-garlic paste  1/2 tsp
oil 2 tsp
add enough water to make a soft dough, at last 1 tsp oil, knead well again
make thin and big roti, put enough stuffing, some grated coconut, grated cheese, fold from top and bottom, then roll from sides , so it gets sealed well
repeat the process with rest of the dough, fill, roll
heat butter in a pan, add the rolls, shallow fry by turning from side to side till brown and crisp, adding butter/ ghee/ oil
remove, cut and serve hot with chutney/ ketchup
