Vegetable Parcel

Ingredients

for pancake
maida/ all purpose flour  100 gm
milk  125 ml
egg  1
ghee 2 tbsp
salt to taste

for filling
potatoes  100 gm
beans  100 gm
carrots  100 gm
cauliflower  1 small
onion  2 big
green chillies  4-5
lime juice of 1/2 lime
ginger 1 tsp finely chopped
garlic paste  1/2 tsp
garam masala pdr.  1/2 tsp
coriander leaves finely chopped  2-3 tbsp
coconut grated  1/2 cup
oil  2 tbsp
salt to taste

Method

for the pancake
make a thin batter with the flour, eggs, milk, water, add salt to taste, keep aside

for filling
cut all the vegetables into small pieces
chop onion, chillies
heat oil, saute onion chillies, ginger, garlic till onion is transparent
add the vegetables, salt, fry for few seconds, add little water
when the vegetables are half cooked, add coconut
cook till the vegetables are done, and water is absorbed
add coriander leaves, garam masala, lime juice, remove
heat a tava, or a frying pan
make small pancakes about 6 cm in diameter
dot with ghee, cook on both sides by turning over
when done, remove to a plate
put some filling in the middle, fold to form an envelope, keep in the plate
make a 2nd pancake bigger than the 1st one
it should be big enough to cover the filled pancake
after cooking on a tava, remove to a plate, put some filling in the middle, place the 1st folded pancake on the filling, fold the 4 edges, as you did for the 1st one
seal the edges with a little batter and keep on the tava with sealed edges down
press a little to make it form
do the same with the remaining batter and filling, in case you find it difficult to make as above, just make one big pancake, fold like an envelope, or roll it if you find it easier and serve hot with hot and sweet sauce
