Creamy Garlic Mashed Potatoes

Ingredients
  • medium-sized red potatoes 2 pounds/ 800 gm, washed and cut into chunks
  • garlic cloves, peeled
  • 1/3 cup fat-free sour cream
  • 1 tbsp butter
  • 1 tsp salt
  • 1/4 tsp black pepper
Method

  1. Place potatoes and garlic in a soup pot and add enough water to cover. Bring to a boil over high heat. Reduce heat to medium and cook 20 to 25 minutes, or until potatoes are tender; drain and place in a large bowl.
     
  2. Mash potatoes and garlic along with remaining ingredients, until smooth and well blended. Serve immediately with roti/ toasted bread/ rice. and pickles.
