Cauliflower Kurma

Ingredients:

Cauliflower 1 (medium)
1 Onion boiled and cut fine
Ginger paste 1 tsp
Coriander powder ½ tsp
Chilli powder ½ tsp
Garam masala ½ tsp
Turmeric powder ½ tsp
Raisin 1 tbsp
Cashew paste 1 ½ tbsp
Coconut milk ½ cup
Salt  to taste
Oil 2-3 tbsp
Ghee 1 tsp

Method:

Dice the cauliflower. Heat the oil in a pan/kadhai and fry the cauliflower after coating them with turmeric. Then add onion, ginger paste, chilli and coriander in that oil and fry. Once the oil separates from the spice, add cashew paste, raisin, sugar and salt and fry. Add coconut milk and water in the end. Once the cauliflower is soft, add the garam masala and ghee and serve it garnishing with some finely chopped coriander leaves. Serve hot with roti/ rice/ toasted bread.
