Cheesy Brown Rice

Ingredients

  • 1/4 cups low-sodium vegetable broth/ water
  • 1 cup brown rice
  • 150 gm  chopped green chilies
  • 1/2 cup low-fat shredded Cheddar cheese
Method

  1. In a large saucepan, bring broth/ water to a boil. Stir in rice and reduce heat to low; simmer about 1 hour, or until rice is tender.
  2. Stir in chilies and cheese. Remove from heat, cover, and let stand about 5 minutes, or until cheese is melted.
