Chutney Pulao

Ingredients

for chutney
green apple  2 slices
raw mango  cut 1 tbsp
coriander leaves  1 cup
pudina/ mint  1/2 cup
green chillies 3-4
ginger 1" chopped
garlic pearls 5-6
anardhana pdr.  1 tbsp
black salt  1/2 tsp
salt to taste
lime juice  2-3 tsp
oil  1/2 cup
ice crushed  2 tbsp
grind all together to a smooth paste and keep aside

for pulao
cooked rice  1 bowl
ghee  1 tbsp
butter  1 1/2 tbsp + 1/2 tbsp
potato boiled and chopped into cubes  1/2 cup
bay leaf  1
cardamom  2
red chillies 2 slit
cloves  2-3
roasted nuts  2 tbsp

Method
in a pan, heat butter and ghee, fry the potato pieces till brown on low flame, drain well and keep aside
in the same pan, roast nuts and keep aside
add more butter, add bay leaf, cardamom, cloves, red chillies fry till a nice aroma comes
add the chutney paste 3-4 tbsp, fry well
add cooked rice, salt to taste, mix well, keep covered on low flame for 2-3 minutes, so the spices gets mixed well with rice
add potatoes, nuts, saving few for garnishing, mix with rice, garnish with the rest
serve hot with cucumber/ tomato raita and roasted papad
