Dosa Tacos !

Ingredients

dosa batter
oil for frying
garlic  1 tbsp
onion finely chopped  2 tbsp
capsicum finely chopped 2 tbsp
tomato puree from 200 gm, or roughly 1 cup
coconut milk  1/2 cup
salt and chilli pdr. to taste
 oregano pdr. 1 tsp
sugar  1 tbsp
sambar masala  1 tbsp
white beans cooked  1/2 cup


for salad
cabbage chopped into thin slices 1 cup
capsicum chopped into thin slices  1/2 cup
salt to taste
coriander leaves  finely chopped  1 tbsp
lime juice  1 tbsp
pepper pdr.  1/2 tsp
mix all well for salad and keep ready

grate cheese as desired

for stuffing
heat 1 tbsp oil, add garlic, fry for a minute, add onion, fry for 2 minutes, add capsicum fry for another minute, add tomato puree, coconut milk, salt and other spices, cook for 3-4 minutes
add beans, mix well, cook till the mixture is dry, keep aside

for tacos
in a non-stick tava, make small round dosa, cook without oil very light on both sides, make all in the same way, keep aside
heat oil in a pan, deep fry the dosa, when half done, fold into half, leaving a big gap in the centre to put filling, fry till crisp, drain and keep aside
to assemble, in each fried dosa, put enough filling, then add salad, top with cheese and serve
those who prefer the cheese melted, microwave for 30-40 seconds, for cheese to melt and serve hot.
