APPLE PIE

INGREDIENTS
pastry
all purpose flour   350 gm
butter    175 gm
chilled water   12-13 tsp

filling
cooking apples   450 gm
castor sugar  75 gm
flour   2 1/2 tbsp
lemon juice   4-5 tsp
cinnamon pdr.  1/2 tsp
butter   3 tbsp

METHOD
for the pastry case
preheat oven to 190 deg. C.
lightly grease a pie dish
in a big bowl sift flour, rub butter till it resembles breadcrumbs.
add water little by little till you can knead it gently to a ball.
wrap it in cling film tightly & refrigerate for 30 minutes.
roll out 3/4 of the dough on a lightly floured surface, refrigerate rest of the dough.
gently lift eh dough with the rolling pin, by rolling it around it, line the pie dish.
prick it with fork, cover with a greased foil.
 fill half of it with beans & bake for 10-15 minutes till the pastry is set.
remove from oven, carefully lift the foil & the beans.

for the filling
in a bowl stir in castor sugar, flour, lemon juice & cinnamon pdr. till well mixed.
wash, wipe & slice apples in thin slices.
arrange the slices in the pie dish so that it is completely covered.
sprinkle the prepared sugar, lemon juice over it
have another layer of apples & sugar mixture.
dot with butter.
roll remaining dough on a lightly floured surface
lift with the rolling pin, carefully place it over the pie dish
make vents with a sharp knife on the top layer
press the corners with a fork to make a nice design.
bake in a preheated oven at 220 deg. C until the top is golden brown, may be 20-25 minutes
be careful, as the time varies from oven to oven, so keep a watch after 15 minutes, or if you feel it is getting brown too quickly, lower the heat to around 180 deg. C.
you may serve it hot or cold with cream or plain.

ps- the all pie, the basic pastry recipe is the same, so the filling can be changed as per your taste & the availability of fruits of the season. Or you can make a vegetable pie too for a change ! as those who don't have sweet tooth, need not miss out on pies, so surprise them with some spinach, potato & cottage cheese filling, with your choice of seasoning, or it can mushroom, carrot, capsicum, cottage cheese ! let your imagination run wild & enjoy pies, hot.
