TO HAVE CRISP VADA

IF YOU WANT TO MAKE CRISP VADAI AT HOME LIKE IN HOTEL, WHERE ITS CRISPNESS WILL LAST, THEN GRIND THE UDAD DAL WELL WITHOUT ADDING SALT. JUST BEFORE FRYING, ADD SALT, GINGER-GREEN CHILLI PASTE, MIX THE BATTER WELL.
FRY IN HOT OIL, JUST BEFORE YOU WANT TO REMOVE, CAREFULLY SPRINKLE LITTLE WATER IN THE OIL, BUT BE CAREFUL, AS THE OIL WILL SPLASH ALL AROUND, THEN WAIT FOR THE NOISE TO SUBSIDE DOWN, THEN DRAIN THE VADAIS & REMOVE. YOU'LL FIND THE VADAIS CRISP, JUST LIKE IN HOTELS.
SOME PEOPLE ADD LITTLE BUTTER IN THE BATTER TO MAKE IT CRISP.
